If you want to use the features in MobileSheetsPro itself, I don't think there are many options besides using the TextBox annotation. When it comes to adding lyrics for different verses, you have two options:
1) Repeat the pages in the page order so that you can put different lyrics on each instance of each page (simplest solution)
or
2) Use the annotation group functionality to put lyrics in different annotation groups and switch between them by tapping the upper right and upper left corners.
If you want to make the changes outside MobileSheetsPro, you would need to use a PDF editor (if you are using PDFs).
