Well, I think I was able to do this. Not sure if this is the best or most elegant way of doing this, but....
Basically I copied the flat and natural symbols online (or maybe from Word?). I was able to paste them into "suggested punctuation" in Hackers Keyboard.
Now, if I want to use them while I am in a Mobilsheets song, I click on the "Settings" icon in Hacker's Keyboard. I scroll down to "Suggested Punctuation" and I am able to copy and paste them in the song I am working on.
It's a bit unwieldy, but not too bad. Basically I would copy and paste the flat and natural symbol once into the song. Then I would copy and paste them whenever I need them. The spacing seems fine (I have only tried it once). But I think I will use that flat symbol a lot so I can now use lower case letters for notes (and have the option of a flat and natural symbol) while using upper case for chords. All seems good.
