So, when I am using the application on my tablet without my keyboard attached, is there a way to minimize MS to get to the PC desktop?

Drag down from the top of the screen to display the application title bar and tap the minimize icon at the top right. I think there may also be some screen gestures where you can swipe from the sides of the screen to access multi-tasking.
